The R.C. controls the quality of the "Ensaimada de Mallorca", from the physical, chemical and sensory points of view. The Sampling Committee is responsible for evaluating the sensory characteristics and issuing the corresponding Sensory Report. The proving process must last for a minimum of 12 hours.
The "Ensaimada de Mallorca" is made with strong flour, water, sugar, eggs, mother dough and pork lard. The handmade character of the product makes it difficult to give an exact formula, so scales have been established defining the proportion of each ingredient, giving rise to an excellent quality traditional product.
Types of product
Plain "ensaimada de Mallorca", the traditional denomination referring to the fact that it does not have any kind of filling or covering.
Angel hair "ensaimada de Mallorca" made with the same ingredients as the plain one, but with a slight variation in the manufacturing process that allows filling with angel hair.
